Efeito de nisina sobre a viabilidade de Salmonella Typhimurium cultivada em meio ácido sob temperatura de refrigeração

Resumo

In this study we evaluated the viability of Salmonella Typhimurium treated with different concentrations of nisin at acidic pH under refrigeration temperature. The greatest reduction in the viability of the pathogen was verified using the highest concentrations of bacteriocin. In view of this, we demonstrated that the low pH conditions under refrigeration temperature can act as sensitizing agents of Salmonella Typhimurium to the action of nisin.
