Entre o slow e o fast food: estudo sobre as resistências e ressignificações das práticas alimentares no Oeste da Bahia

Resumo

This study aimed to construct the mapping of the main commensality spaces that characterize the conflicts of tradition and modernity in the municipality of Barreiras. It was done through the delimitation of the commensal spaces of the city, from which a key informant was chosen to be interviewed and then the spaces were mapped through the observation of the identities peculiarities of fast and Slow food. The conflicts of tradition and modernity present in the Barreiras food scene are mainly due to the migratory flows that have intensified since the transformation of the city into an attractive pole.
